100-Mile Recipes

Do you have a recipe that features a 100-mile ingredient?  Please share it with us!  Here's one of our favourites:

Gazpacho
4 or 5 large ripe tomatoes, peeled, seeded, and chopped
1 green pepper, finely chopped
1 red pepper, finely chopped
5 cloves garlic, minced
2 cucumbers, peeled, seeded, and diced
1 red onion, peeled and thinly sliced
4 cups stock - chicken, beef or vegetable

2 tablespoons fresh lime juice
2 tablespoons red wine vinegar

2 tablespoons chopped fresh basil
2 tablespoons chopped fresh Italian parsely
4 tablespoons chopped fresh cilantro
1 tablespoon of olive oil (optional)
kosher salt and black pepper

Combine vegetables in a large bowl. Add the stock, lime juice, vinegar, olive oil and stir. Stir in the fresh herbs and season with salt and pepper to taste.  Leave chunky as is, or tranfer in batches to blender/food processor for a smoother consistency.

Chill the soup for at least one hour before serving.   Best served with a dollop of Greek yogurt!
